My favorite Sunday meal is my turkey taco soup. It's easy, makes the house smell homey (what is it about a sauteed onion?), and gives me lunches and dinners for the week. This recipe can be tweaked to however you like it or whatever you happen to have on hand. Sometimes I add pasta or rice but if I want something low in Weight Watchers points, I don't. It's that easy.
Brown ground turkey breast with an onion.
When it's done, add a packet of low sodium taco seasoning and some chicken stock or water. Whatever.
Then add it to a big soup pot (is that a kettle?).
Then start dumping stuff in that you like. I add:
corn
spinach
black beans
crushed tomatoes
pinto beans
low sodium chicken broth
I add ditali or orzo when I really want it to be hearty. This makes it more like a chili than a soup. Yum.

If you have an avocado and some cilantro around, top it with that, and find some shredded cheese like cheddar or colby jack.
